Summer calls for a change of fare and easy to make summer sandwiches are popular because of their light nature and quick preparation times.

Ham And Asparagus Sandwich

ham_asparagus_sandwichSimple to make and unforgettable, the ham and asparagus sandwich is a staple of the summer luncheon, tea or outdoor event.

Cook asparagus for 1-2 minutes in salted, boiling water. Drain well and let dry on kitchen paper. Group in twos. Roll the pairs in a slice of ham.

Split the rolls down the middle, but do not severe completely.

Mash the butter with black pepper and lemon juice. Liberally, spread the butter mix over the interior of the roll. Place the ham/asparagus roll into the roll and add a touch of salad dream if desired.

Estimated preparation is 15 minutes.
Estimated cooking time is 2 minutes.
Serves 12.

The Best Crab Sandwiches

Ingredients for sandwich:

8 hand-cut slices of high quality brown or granary bread.
Unsalted butter.
1 lemon cut into 4 wedges

Ingredients for Crab Paste

Brown crabmeat from one large (1.5 kg) brown crab. Save the white meat.
1 teaspoon mayonnaise
1 teaspoon tomato ketchup
½ lemon juice
1 teaspoon Dijon mustard
Big pinch cayenne pepper
Few drops of brandy

Ingredients for White Meat

Pick white meat from same crab
Small handful chopped mixed herbs oil parsley, dill, tarragon, chervil and chives
½ lemon juice
2 teaspoon olive oil

Bringing it together

First make the crab paste. Mix the ingredients in a bowl and season. Set aside.

Using a separate bowl, mix the white meat with the herbs, lemon juice, oil and seasoning.

Spread the bread lightly with butter. Spoon and spread crab paste over the four slices. Pile the white meat high and top with remaining bread.
Trim the crust off and serve in halves or quarters, depending upon the event. Lemon wedges are nice on the side.

Cucumber and Herb Triple Deckers

What announces summer better than a tripe decker cucumber, herb combo sandwich?


1 small cucumber
200g tub soft cheese
½ small lunch meat, finely chopped
Small bunch chives
9 thin slices wholemeal bread

Putting Together is easy.

First lay cucumber slices on kitchen paper to dry.
Whizz cheese, some mint and seasonings in a small food processor or with blander.
Stir in chives.
Spread the cheese mixture over 6 slices of bread.
Reserve 12 slices of cucumber and place remainders over cheese spread.
Add bread slices and layer withy cucumbers.
Top with a plain slice.
Add another layer.
Use sharp knife to trim crusts, and cut into 4 squares.
Top each sandwich with a cucumber slice. Sprinkle with chives.

Preparation time is 15 minutes. No cooking. Serves 12.
